Failing to plan is planning to fail ‼️ 

This is especially true when it comes to camping, isn’t it? If you don’t plan well, you’re short on a few key items that would have made your meal that much better, or, you’re short on food all together and end up having to eat chips and salsa for lunch. Not the end of the world, but with two kids in tow, it’s not an ideal situation.

So here’s the 3-day meal plan I’ve put together for our upcoming camping trip. Easy, delicious and fun! Plus, most of this can be prepped ahead of time at home so that we’re not spending our days slaving over our meals.

We’ll be making all of these meals using a 12” cast iron pan on a Coleman 2-burner stove and Epicure’s multi-purpose and rectangular microwave steamers (so thankful for the tiny microwave in our tiny trailer!)

⛺️ Day 1: 
I only planned for dinner on the first day since we’ll be arriving in the afternoon. The first meal needs to be super simple, as we’ll still be in the process of setting up the campsite.

Rice and Bean burritos with sautéed onions and peppers, salsa and guacamole, and tortilla chips

⛺️ Day 2:

Breakfast: Whole grain toast with almond butter and bananas, pistachios and apple slices.

Lunch: Chicken breast and cheese melts (over the fire!), with veggies and Epicure’s French onion dip 

Dinner: Chicken Marbella with potatoes and green beans (if you haven’t yet tried this meal from Fresh Off the Grid, I definitely recommend it. It’s a must when we go camping!)

⛺️ Day 3:

Breakfast: Eggs, potatoes, green beans (left over from the night before), mixed berries 

Lunch: Hamburgers with all the fixings (quickles, big burger sauce, sweet & spicy mustard, honey mustard, cheese, lettuce and tomatoes) and corn on the cob with an Oh Canada dry glaze compound butter

Just two meals to plan for on the third day as we’ll be packing up and heading home after lunch.

That’s all there is to it! I’m going to make sure to pack a few snacks such as:

🤤 apples, oranges and bananas – fruit that we can eat on the go
🤤 homemade trail mix with raw cashews, walnuts, almonds, toasted coconut chips, raisins and chopped dried mangoes
🤤 a package of Epicure’s chocolate pudding for a sweet treat that comes together in no time after a meal
🤤 veggies with hummus
🤤 the obvious and so necessary marshmallows and sausages for the campfire!

The key here was selecting meals that we would all enjoy eating while away, but that were still simple enough to make and that could come together easily with the equipment we have on hand. 

After I drafted this plan last night, I placed an online grocery order that we’ll pick up this morning on our way home from Fruits Express Ltd., where we’ll get all of our produce.
