Teriyaki Chicken Kebabs!
Yum 🤤 So many flavours on this plate! With such a beautiful day yesterday, I knew I wanted to have something cooked on the #bbq and these chicken skewers were just the thing!
Making them is as easy as dicing up some chicken breast and smothering them in a marinade with @epicureofficial teriyaki dry rub, soy sauce, red pepper jelly and some avocado oil, and letting them sit in the fridge for a few hours.
Meantime, I prepped a salad with chopped romaine, green cabbage, fresh herbs (cilantro, dill, mint), cucumber and green onions and tossed it in a delicious homemade dressing made using #epicure honey mustard and Oh Canada dry glaze.Â
Last step was to cook some brown rice in the instant pot, which I did just before assembling my skewers by alternating marinated chicken with red and yellow peppers, and onions on the metal skewer sticks.
Tender chicken, perfectly cooked brown rice and a crunchy salad, a perfect summer meal!
