Yes, this is a meal that takes more than 30 minutes to put together. But I promise it will be worth the effort.

Plus, the chicken needs to cook at least an hour. So, in reality, it will take you just a few minutes to get this recipe going, then the oven will do the rest!

Roasting a chicken, much like roasting a turkey, can sound intimidating, right? Like it’s probably really complicated and a task best reserved for seasoned chefs.

Wrong!

Roasting a chicken could not be simpler!

Just grab a big Dutch oven, line the bottom with your favourite root veggies, plop your chicken over the top, cover it with butter or oil and your favourite seasonings. Stuff it with what you have on hand (yes, this step makes a difference and keeps your chicken nice and juicy – totally worth the few extra minutes!) – lemon quarters, sliced onions, fresh herb stems, garlic… the possibilities are endless – get creative!

Then, move the chicken to the oven, first at a higher temperature and covered, to kickstart cooking. After a while, crank down the temperature and remove the lid to let it breathe and continue to cook slowly.

Some argue that it’s important to “water” the chicken with the cooking juices every 15-30 minutes or so while it’s cooking.

I call shenanigans – not watering saves you time and keeps this recipe hand-off during the cooking time, produces an extra crispy skin and keeps all the seasonings on there. Win-win!
